Vegetarian family dinners, planned for you

Vegetarian family dinners come in two flavors. Some families are fully vegetarian and want variety beyond pasta and cheese. Many more have one vegetarian at a mixed table: a teenager who stopped eating meat, a parent cutting back, or a family that wants a few meatless nights a week. Ulivo plans for both, and this guide shows how.

One vegetarian at a mixed table

The common trap is cooking a main dinner plus a "vegetarian version" every night. Ulivo plans one dinner per night for everyone eating, around each person's rules. If your daughter is vegetarian, every night she's home gets a dinner she can eat, and that dinner is for the whole table. On nights she's away, the rest of the family can have the roast chicken.

Vegetarian is a strict rule in Ulivo. That means more than "no visible meat". Ulivo checks every ingredient line in every recipe, so it catches the ones that are easy to overlook:

If Ulivo can't identify an ingredient line, it doesn't assume it's fine. If the line is part of the dish, the dinner is ruled out for the vegetarian; if it's only an optional topping, Ulivo tells you to leave it off their plate.

Ulivo also plans for vegan, pescatarian, no pork, no beef, dairy-free and gluten-free, and rules can be combined. A vegetarian who's also allergic to sesame gets dinners that respect both.

Fully vegetarian weeks

If everyone in the house is vegetarian, set the rule for each person and every dinner will be vegetarian. The real question is variety, and that's where the food matters.

Ulivo's recipe library is Mediterranean-style, a way of eating that leans on beans, lentils, chickpeas, vegetables, whole grains and olive oil, so a large share of it is vegetarian to begin with. A vegetarian week from the library might include:

Many of these are marked as good for leftovers, so you can plan a leftovers night and cook once for two dinners. You can browse the recipes for the full range, and save your own family favorites so Ulivo plans with them too.

Protein for growing kids

A common worry with vegetarian kids is protein. Beans, lentils, chickpeas, eggs, yogurt and cheese are all regular ingredients in the library, and Ulivo shows each person's portion for every dinner. If you have specific nutrition goals for a child, talk to your pediatrician or a registered dietitian. Ulivo is a meal planner, not nutrition advice.

A few meatless nights a week

Not every family wants a strict rule. If you just want more vegetarian dinners, ask for them:

You: Plan next week with two vegetarian nights.

Assistant: Here's your week. Monday is pasta e ceci and Thursday is shakshuka with peppers and feta, both vegetarian. The other nights keep your usual mix.

That's a preference, not a rule, so the rest of the week stays flexible. If one of those dinners doesn't land, say so and next week adapts.

Portions and the shopping list

Each person in Ulivo has a portion size, and children under 13 start at a smaller portion than adults. The shopping list adds up the week's ingredients at those portions, so a family with two small children isn't buying four adult servings of everything. Things you already have, like rice or olive oil, come off the list when you tell your assistant. If you shop at more than one place, the list can be split by store. See the meal planner with a grocery list guide.

Questions parents ask

Can I plan vegetarian dinners for just one person?

Yes. Set vegetarian for that person only. Every night they're eating gets a vegetarian dinner for the whole table, and other nights don't have to be.

Does Ulivo catch hidden meat, like chicken stock?

Yes. It checks every ingredient line, so stock and broth, anchovies, fish sauce, gelatin, lard and cured meats all rule a dinner out for a vegetarian. Brand-specific ingredients, like a spice blend with animal products, are on the label, so check those.

Does Ulivo plan vegan dinners?

Yes. Vegan is one of the diets it plans for, along with vegetarian, pescatarian, dairy-free, gluten-free, no pork and no beef.

What if I just want fewer meat dinners, not a rule?

Ask for it: "two vegetarian nights this week". It's a preference for that plan, so the rest of the week keeps your usual mix.

Are the vegetarian recipes kid-friendly?

Many are, and the library marks kid-friendly recipes. Tell Ulivo what your kids thought after dinner and it learns which ones to bring back.
